Somewhere between the diagnosis and the grandkids, dinner became three separate productions - the salt-free plate, the protein plate, the whatever-the-teenager-will-eat plate - and the household cook became a short-order line with no break and no meal of their own. It is exhausting, and it is fixable.
The fix is one-dinner engineering: a single meal, built in layers - the base everyone eats, the additions each plate needs, the sodium and potassium adjusted at the end, not the beginning. No - the entire method adapts them. The layer plan keeps the base dish everyone knows and adjusts the end of the meal, not the soul of it. Abuela's caldo stays caldo; the sodium exits at the layer, not the identity.
We come to your kitchen, cook with you, and leave the written plan on the counter. Bexar County and adjacent are included; the Hill Country at mileage. Evenings and Saturdays available, because families eat then.
With your written okay, yes - we send progress notes and work inside every instruction your physicians gave. We never adjust medications or treatment plans; we make dinner cooperate with them.
Marcus runs the negotiation - a treaty, not a surrender. Teenagers usually land at eight to twelve accepted foods within two months, and the household stops cooking around the holdout.
Everything in English and Spanish - instructions, plans, and the check-ins, in whichever language the kitchen actually runs on. Sofia takes the calls abuela prefers in Spanish, and the recipes stay bilingual.
